The all-time classic with a twist. Are you ready for the intenseness? Dark chocolate brownies with a handful of fresh raspberries to take off the edge [serves 8]

For the brownie:

  • 120g dark chocolate
  • 120g butter
  • 3 eggs
  • 200g caster sugar
  • 50g cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 pinch of salt

Topping:

  • 125g fresh raspberries

  • Oven
  • Heatproof bowl: Medium (salad bowl size)
  • Saucepan: Medium size
  • Bowl: Small (breakfast bowl size)
  • Bowl: Medium (salad bowl size)
  • Baking dish: Smaller than 20x20cm
  • Kitchen scales
  • Cooking cutlery: Knife, teaspoon, spatula, wooden stirring spoon
  • Parchment paper

πŸ’š low FODMAP truths:

  • Dark chocolate: Most dark chocolate brands are low FODMAP, e. g. they contain cocoa mass, sugar, cocoa butter, soya lecithin (emulsifier), cocoa solids. We cannot give advisebut be careful with brands that contain many other ingredients

 

  • Butter: Does not contain FODMAPs. However, it is high in fat and when consumed in excess, it can be an additional symptom trigger

 

  • Cocoa powder: Most brands are low FODMAP, e. g. they only contain cocoa powder. We cannot give adviseΒ but be careful with brands that contain many other ingredients

 

  • Raspberries: Limit large quantities (90g or approx. >20 raspberries), as they contain high amounts of oligos (fructans)

1. Preheat oven (150 degrees ♨️).

 

2. Heat proof bowl and medium sized saucepan, melt chocolate and butter:

+ 120g dark chocolate [ πŸ’πŸ»Β break chocolate into pieces. Place into heatproof bowl and melt over simmering water, don’t boil the water, the steam could burn πŸ”₯Β you. Alternatively, melt in microwave ]
+ 120g butterΒ  [ πŸ’πŸ»Β butter melts quicker, so add it after the chocolate begins to melt ]

 

3. In small bowl, beat eggs:

+ 3 eggs

 

4. In medium sized bowl, prepare batter:

+ Put meltedΒ dark chocolate and butter into bowlΒ [Β πŸ’πŸ»Β use a spatula for this. Then slowly stir in batter ingredients with a wooden or normal spoon until the batter is smooth ]
+ 200g caster sugar
+ 50g cocoa powder
+ 1 teaspoon vanilla extract
+ 1 teaspoon ground cinnamon
+ 1 teaspoon ground ginger
+ 1 pinch of salt
+ Add 3 beaten eggs

 

5. Oven, bakeΒ the brownies:

+ Lay parchment paper into small-ish baking dish [Β πŸ’πŸ» smaller than 20x20cmΒ ]
+ Add brownie batter

Bake in oven 30 to 40 minutes

 

6. Serve with raspberries:

+ 3 raspberries (or a handful) per portion
