The walnut meatballs with a baked cherry vine tomato puree that add a little bit of poshness to your day [serves 3]

For the meatballs:

  • 500g minced beef
  • 4 tablespoons fresh dill
  • 45g walnuts
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1-3 tablespoons olive oil

 

For the tomato puree:

  • 360g vine cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

 

🍳 Equipment:

  • Oven
  • Bowl: Medium (salad bowl size)
  • Large plate
  • Frying pan: 28cm diameter
  • Cooking cutlery: Tablespoon, tongs (or use two forks instead!), vegetable knife

  • Walnuts: Limit large quantities (135g or approx. 35 nut halves), they contain moderate amounts of oligo-fructans

 

  • Olive oil: Does not contain FODMAPs. However, it is high in fat and when consumed in excess, it can be an additional symptom trigger

 

  • Cherry tomatoes: Limit large quantities (222g or approx. 13 cherry tomatoes), they contain moderate amounts of oligo-fructans

MEATBALLS (starter) [ πŸ’πŸ»Β ->Β πŸ‘€Β bottom of page for main course recipe ]

 

1. Preheat oven (180 degrees ♨️).

 

2. In bowl, mix:

+ 500g minced beef
+ 4 tablespoons fresh dill
+ 45g walnuts chopped (don’t chop too small, break them apart with your fingers)
+ 1 tablespoon olive oil
+ 1 tablespoon Dijon mustard
+ Salt and pepper to taste

 

3. Large plate and your hands πŸ˜ƒΒ ,Β prepare meatballs:

Take approx. 1 tablespoon of the meat mix and form balls, roll with the palm of your hands

The mix should make approx. 16 or 18 meatballs

 

4. In frying pan, cook meatballs (medium ♨️):

+ 1-3 tablespoons olive oil
+ Meatballs

Fry meatballs 7-12 minutes depending on size until cooked

 

CHERRY TOMATO PUREE

 

1. Chopping board and smallish baking dish [ πŸ’πŸ»Β smaller than 20x20cm ], prepare tomatoes:

+ 360g vine cherry tomatoes [ πŸ’πŸ»Β cut with knife but don’t cut through, then squeeze with hands into baking dish]

 

2. Oven, bake the vine cherry tomatoes:

+ Tomatoes in baking dish
+ Add 2 tablespoons olive oil
+ Salt and pepper to taste

Bake in oven approx. 25 minutes [ πŸ’πŸ»Β don’t burn the tops, stir occasionally ]
